GREEN SERRANO: This is a hot powder often used as a "kicker" by Chile Verde cooks. It is also used to add some zest to salsa and green sauces. We buy fresh serrano chiles, clean and stem them and, leaving the seeds and veins in for the heat, dehydrate them for 12-14 hours before we reduce the chiles to talc-fine powder.
